If you're cold and huddled inside I've got a great soup for you that's healthy and easy.
Butternut Squash Soup
1 small onion (or half large), chopped
2-3 leeks (white and light green parts only), chopped (I grew to love leeks years ago after I read French Women Don't Get Fat, and use them all the time.)
1 butternut squash, peeled and cut into 1 inch-cubes (no precision needed)
6 cups chicken broth
1 cup cinnamon applesauce (OR 1 cup regular applesauce + 2 tsp cinnamon + 2 TBS maple syrup or sugar, OR I'm sure a chopped whole apple + cinnamon would be perfect too)
few dashes garlic powder
several shakes of salt
few pinches of fresh or dried thyme
Directions: Saute onion and leeks for a few minutes in a large pot. Add in rest of ingredients and bring to a boil. Turn down heat to medium and allow to simmer for 30 minutes - 1 hour. Make sure squash has completely softened and then use an immersion hand blender (I use mine all the time) or pour batches into a regular blender and blend until almost completely smooth with a few chunks remaining. Taste and adjust seasonings if need be. (The type of chicken broth used has altered the taste of mine from batch to batch in the past.)
Serve with crackers or grilled cheese.
